You can just leave them in the liquid. I suggest before eating them, soak them for a day in fresh water, then discard the water and cover them in olive oil with your choice of herbs.

You definitely need to soak the olives at the end or they’re too salty to eat. Looking forward to this year’s ‘harvest’!
